Freezing by immersion or spraying

It is a very used process with packaged birds (immersion) or fish (immersion or spraying).
The process of immersion is done in tanks where the liquid (brine) circulates between the product to freeze the evaporator.
A great advantage is the high coefficient of heat transfer (50kcal / h.m2 ° C which allows fast freezing even with temperatures not too low brine and sodium chloride = -18ºC).
The main drawbacks are the corrosion of the materials by the salts which make up the usual brines and the contamination or deposition of waste in the case of unpackaged products. Spraying is used in small basements of small small fish or shrimp vessels.
