Cascade Evaporator or Baudelot

This type of evaporator is used for cooling liquids, usually process water, to a temperature around 0.5 ° C above its freezing point.
It is designed so that it will not be damaged if liquid freezes.
The older models of these evaporators consisted of a series of
tubes mounted one above the other on which the liquid to be cooled escapes,
in a thin film, with the refrigerant circulating inside them.
The latest models use stamped and corrugated stainless steel plates, with the corrugations serving as a coolant passage.
The continuous surface allows better control of the distribution of the liquid, and the stainless steel offers a hygienic surface and easy cleaning.
This evaporator is also widely used in the beverage industry (breweries) as well as in
as for the cooling of milk.
