The evaporator is the heat exchanger where the heat is absorbed, evaporating the fluid
soda.
The absorption of heat is what causes the cold at the desired location (chamber,
freezing, ice factory, etc.).
Evaporation is done at low pressure and low temperature.
The heat absorbed from the product to cool (and / or freeze) can be
different means:
• Gaseous: normally air acting as an intermediate medium
• Liquid: may be intermediate medium (water, brine, glycol), or final product at
cool (milk, beer, juices)
• Solid: normally final product in direct contact with the solid surface of the
evaporator (plate freezers freezing meat or other food)
According to the indicated processes, the evaporators of:
• air or frigidifiers;
• evaporators for liquids or liquid coolers;
• Contact evaporators.
As for the constructive form, they can be classified in:
• coils, fins or not;
• immersion or open tank evaporators (for liquids);
• closed evaporators (shell and tube, shell and coil, tube in tube,
special); contact plates.
