The hot gas defrost essentially uses the latent heat of condensation to melt the ice accumulated in the evaporator. The idea is that the flushing gas must be very hot to make a good defrost.
It is important to maintain adequate pressure on the evaporator in the defrost cycle to obtain a sufficient temperature to melt the ice.
